Ingredients

Crust:

  • 1 ½ cups almond flour
  • ¼ cup tapioca starch
  • ¼ cup sugar
  • ¼ cup melted butter (or coconut oil)
  • Pinch of salt

Filling:

  • 3 large eggs
  • ¾ cup sugar
  • ¼ cup fresh lemon juice (about 2 lemons)
  • Zest of 1 lemon
  • 1 tbsp almond flour

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
  2. Mix crust ingredients and press firmly into the pan. Bake for 10–12 minutes until lightly golden.
  3. Whisk eggs, sugar, lemon juice, zest, and almond flour until smooth.
  4. Pour filling over the crust and bake for 20 minutes or until set.
  5. Cool completely before dusting with powdered sugar and cutting into squares.

Tips:

For a dairy-free version, use coconut oil instead of butter. Store bars covered in the fridge for up to 5 days.
